Additional note
If this catches on, I'm looking to involve you, the readers in some way. What I'm thinking right now is that before each event, there will be room for predictions by the readers of the blog. The person who wins the prediction contest will be rewarded by having the opportunity to 'book' one of the fights for the upcoming cards.
This way it'll be somewhat interactive, and the prediction contests will have an extra bit of spunk to them. Yes, spunk.

Further clarification
Each card will consist of 2 preliminary fights and 5 fights for the main card. I will try not to create supercards all too often, in order to make people have to wait for those types of events.
Since owning the game, I've created more than a few original fighters, which will also make random appearances on the cards, starting with the prelims and hoping to get a chance to make a name for themselves.
Considering the fact that there's no simulation option on the game, I will be playing the fights myself, but won't reveal which fighter I'm in control of. It will more than likely be quite obvious anyway. I'll be playing on the expert level of course, and will hope to produce some classic bouts along the way.
The reason that I'm not doing an online multiplayer league is due to the fact that there's a bit of lagging sometimes when playing online, and when I record videos using my Gamebridge, that just adds to the lag. I might try it out sometime, but my earlier experiences have made it obvious for me that the fights definitely become lackluster when attempting to record online material.

As for updates, it's hard to say when a certain card will appear and when the video results will be posted. I'm fairly optimistic that updates will occur regularly and so will the fights.
